cured salmon

INGREDIENTS

  • 500g salmon middle fillet
  • 80g of our Orange Jelly with Cardamom & Chilli
  • 1 tspn coriander seeds crushed
  • Grated zest 1 orange
  • 25g coarse sea salt
  • 1 tbspn Dijon Mustard
  • 1 tspn coarsely ground black pepper


INSTRUCTIONS

  1. Place salmon fillet skin side down on piece of clingfilm.  
  2. Mix all marinade ingredients and spread evenly over salmon.  
  3. Wrap securely in clingfilm and place on tray in fridge for 48 hrs.
  4. After 48 hrs, remove clingfilm, excess liquid and any marinade, wipe with kitchen paper.
  5. Slice thinly and serve as starter or canapé, garnished with more of our Orange Jelly with Cardamom & Chilli and fresh herbs of your choice.
