Half jar of our Orange Jelly with Cardamom & Chilli
Sprigs of fresh thyme, oregano or marjoram
1 heaped tspn ground sumac
1 heaped tspn ground cumin
3 tbspn Olive oil
Glass of white wine
Salt and pepper
Fresh coriander to serve
Preheat oven to 180°C Fan.
Cut sweet potatoes in half lengthways, cut onions into eight segments, cut mandarins in half or quarters depending on size, slice garlic bulb in half horizontally and separate some of the cloves, place in roasting tin.
Cover with remaining ingredients and mix well to combine.
Roast in oven for 45mins-1 hour, turning veg over half way
Serve hot or warm, with tahini dressing or just drizzle with olive oil and roughly chopped fresh coriander
